So I've been wanting to play some PS1 games lately, but I can't seem to set up the emulator correctly on my Mac. Could anybody help me with this?

If you have a intel mac you can try running Wine

Or maybe Boot Camp

Maybe pick up a cheap PC laptop (Like I'm planning for gaming)

Here are your options...

1.) Get a Windows Emulator and run ePSXe off of that.

2.) Buy a cheap refurbished Laptop with Windows OS installed off eBay.

3.) Buy a modded PSone that can read burned discs.

4.) If you own a PSP you could install Custom Firmware & Popsloader.

Wine + pSX works well (if you like I'll make a standalone app bundle).

Hey Seph that'd be great. What else would I need to do (like bios and stuff) to get it to work?

I'll put Wine and a BIOS in - it should just be click & run.

You might need X11.app off the Mac OS Install DVD to use it though (in optional installs).

If it's running too fast you'll need to go into Configuration and uncheck both 'Vsync' boxes under the Graphics tab.
